Lignum Blanc is the proof of Albet i Noya's technical know-how.  Chardonnay and Sauvignon Blanc come from old vines (20-30 years) and are complemented by a little amount of young vines Xarello. Vinification of the three varieties was carried out separately. Xarello was fermented in stainless steel tanks. The Sauvignon Blanc was also fermented in stainless steel tanks, then aged on its lees for 4 weeks. As for Chardonnay, it was fermented and aged for 2 months in oak barrels. Finally, the wine was blended and lightly filtered before its bottling. The barrel-fermented Chardonnay brings roundness, the sauvignon brings its acidity and minerality, the local Xarello adds freshness.

Tasting notes
Dominated mostly by crisp orchard fruit, golden apple and pear. There is a honey note that adds warmth and sweetness to the nose, combined with a slight cinnamon spice. You can feel and taste the oak presence, which brings silkiness to the wine. While the Xarello grape is commonly used in producing Spain's sparkling wine, Cava, the same bracing acidity is sought after and found here. Stone fruit and roasted Macadamia nuts flow through to a long lasting finish.
Try it with seared scallops with saffron, served on a bed of sautéed white beans, ham, onion and a splash of wine.
